Ceviche (or seviche) is an appetizer that is popular throughout Latin America. Sometimes known as “Mexican Sushi,” although the acidity of the lime juice actually “cooks” the shrimp or fish and firms the flesh.
When lime and cilantro are major flavors, B’s Blend is the match. Our B’s Blend is made from Riesling and Semillon from one of Yakima Valley’s best vineyards, crisp and zingy to match with the zingy fruit and seafood that is ceviche. Riesling, the most versatile food wine and the perfect companion to ceviche, sushi, or most any disk with lime and cilantro.
Recipe:
- 1 lb large shrimp (quartered)
- ½ red onion (sliced)
- 8 limes (juiced)
- 1-2 jalapeños (chopped)
- ½ cup fresh cilantro (chopped)
- ¼ tsp salt
- pepper, to taste
- Mix and let set overnight
- Serves 4
Serving suggestion: scoop up with a tostada or roll up in a fresh, warm tortilla and enjoy with Paradisos del Sol’s B’s Blend.
