Ceviche de Camaron

Ceviche (or seviche) is an appetizer that is popular throughout Latin America. Sometimes known as “Mexican Sushi,” although the acidity of the lime juice actually “cooks” the shrimp or fish and firms the flesh.

When lime and cilantro are major flavors, B’s Blend is the match. Our B’s Blend is made from Riesling and Semillon from one of Yakima Valley’s best vineyards, crisp and zingy to match with the zingy fruit and seafood that is ceviche. Riesling, the most versatile food wine and the perfect companion to ceviche, sushi, or most any disk with lime and cilantro.

Recipe:

  • 1 lb large shrimp (quartered)
  • ½ red onion (sliced)
  • 8 limes (juiced)
  • 1-2 jalapeños (chopped)
  • ½ cup fresh cilantro (chopped)
  • ¼ tsp salt
  •  pepper, to taste
  • Mix and let set overnight
  • Serves 4

Serving suggestion: scoop up with a tostada or roll up in a fresh, warm tortilla and enjoy with Paradisos del Sol’s B’s Blend.

El Ranchito Restaurant:

image001

El Ranchito was not just a restaurant, it was a culinary mecca, an institution, an icon, a tradition, a “where have you been all my life,” a slice of Mexico, a standard bearer, a benchmark, where they make REAL Mexican food.

They had been doing so for 56 years. When you walked through the doors, you walked into a different America—a Spanish America with piñatas, tortillas, empanadas, and musica Mexicana. This is what makes the USA great, it is what we give thanks for.

El Ranchito was the oldest Mexican restaurant in the Yakima Valley. Family-owned, it had been voted #1 Mexican Restaurant in “Northwest’s Best Places” six years in a row!

But, do not despair, we have a replacement fabulous Mexican restaurant for you in Zillah: Taqueria La Placita. Definitely the best authentic Mexican restaurant around and only two miles (as the crow flies) from our place. Their address is 501 1st Ave in Zillah and their phone number is 509.314.6455. They do take out and you can bring it to our place and have a picnic!
