Yes, yes, we know most people eschew white wines in the winter. However, we still drink plenty of white wine between autumn and spring. The Sève is great with our stir frys, which are made fresh from greens from our garden and beef from our cow. The Oyster White is magnificent with the fresh tuna that Paul caught last September (birthday trip to Westport with Kevin) or with the rainbow trout that friends keep giving us.
